Speaking on Apple TV using a headset as audio input.
You can connect most audio devices as input to your iOS device via an adapter for the lightning port. You can then listen directly to it, for example on your AirPods.This demo uses the audio lineout from a macbook as an input audio device, but you could really use any other audio input device as well.
This demo combines clAirAudient with the Air Camera app to grab audio and video separately and send the mixed stream via AirPlay to Apple TV.
